Speculaas!

This past spring, we took a family trip to the Netherlands and Belgium (this is us in the Keukenhof Gardens).



While the tulips, canals, churches (etc.) were nice, what we most enjoyed was the food: Rijstafel, pannenkoeken, Belgian chocolates, Liege waffles, Belgian beer, and pastries (like the cremekoek we discovered in Bruges)...



And speculaas (in Dutch, speculoos in Flemish), tiny little windmill spice cookies that came with our coffees and hot chocolates on our first (jet-lagged) morning. They were delicious, and it was requested that I make speculaas when we got back home.


Well, guess what arrived in the mail yesterday!



Hooray for Christmas cookie-season!


(Yes, I know I'm supposed to figure out how to replicate the creme koek, too. Haven't gotten to that one yet).
